Puran Poli Recipe

Ingredients:

For Making Puran

    1 cup split Chana Dal
    1 cup Light Jaggery / Gul / Gudh
    Dash of Nutmeg powder
    1/4 tsp Cardamom powder
    1 cup Water


For Making Dough

    1 cup Whole wheat flour
    1/2 cup Maida / All Purpose Flour
    1 tbsp Oil
    Salt to taste



Method

How to make Puran?
1) Wash and soak chana dal in enough water for 4 hours.
2) Add chana dal in pressure cooker, add a cup of water and pressure cook until 4 whistles.
3) Mash boiled chana dal, add it in to pan, add jaggery in to it, mix well and cook till mixture becomes thick and starts to leave sides of pan.
4) Add cardamom powder, a dash of nutmeg, mix well. Now Puran is ready.

Puran poli Dough
1) Take maida, whole wheat flour in to a deep bowl, to that add salt, oil and mix well.
2) Add water little by little and start to knead the dough.
3) This dough has to be little loose and soft.
4) Cover and leave it to rest for 1 hour.

How to make Puran poli?
1) Again take just a tsp of oil and start to knead dough well.
2) Take small ball from dough and roll like puri.
3) Take small ball from Puran.
4) Stuff puran in to rolled puri, seal the edges and squeeze out excess dough from it.
5) Roll in circular direction like paratha.
6) Heat up pan on a medium heat, roast puranpoli from both the sides till it gets nice golden spots.
7) Once Puranpoli is about to done, apply ghee
8) Serve hot with a dollop of ghee over it!

Aloo Paratha

Aloo Paratha is mashed potato stuffed Indian bread. Especially popular in northern parts of India, aloo parathas are enjoyed for breakfast, snack and for meals. Aloo Parathas are served with spicy coriander chutney, Yogurt. Paratha stuffing is usually spicy.


Ingredients:For stuffing

Take 2 medium potato (boiled and peeled) - Use Potatoes which are good for baking
1 Tbsp Garlic paste
1 to 1 & half Tbsp Green chili paste
1/2 cup finely chopped Cilantro
1 Tbsp Cumin Seeds
1 Tbsp Cumin Powder
Salt to taste
For Paratha Cover
1 & 1/2 cup Wheat Flour
1 Tbsp Salt
Water
2 Tbsp Oil
Also Little butter

Thalipeeth Maharashtrian dish



















Thalipeeth is a Maharashtrian dish made with multi grain flours. It is usually served as a breakfast or snack with some butter or yogurt or some dry garlic chutney.

Ingredients
Besan - 1 cup
Jowar flour - 1 cup
Rice flour - 1 cup
Bajra flour - 1/2 cup
Wheat flour - 1/2 cup
Chilli powder, Corriander powder, Cumin powder, Garam masala powder - 1 tblsp each
Turmeric - 1 tsp
Grated Jaggery - 2 tblsp
Chopped Onion - 1/2 cup
Chopped Coriander (Cilantro) - 1/4 cup
Garlic - 2 tblsp (finely chopped)
Salt - to taste


Method

Method
1. Mix all the above ingredients and knead with enough water into a soft dough.
2. Cover and let the dough rest for about 10 minutes. After that make small balls of the dough.
3. Pat each ball with fingers on a wet muslin cloth or a greased plastic cover to roll out the thalipeeth. (You can use a big ziploc cover too. Wet your hands before patting.)
4. In the meantime heat up the tawa.
5. Drop 2-3 drops of oil on the thalipeeth and put it on the hot tawa. Put the rolled out thalipeeth such that the top touches the tawa.
6. Carefully remove the cloth/plastic cover from the thalipeeth.
7. Let it cook well on both sides.
8. Serve hot with dry garlic chutney or yoghurt or raita or fresh coconut and chilly powder.
